Shrimp Ceviche Recipe from Peru

Ingredients to make Shrimp Ceviche from Peru:
1 pound of Cooked Shrimp
2 small red onions
4 Tomatoes
10 Lemons (juice)
1 Orange (juice)
½ cup tomato sauce
1 bunch of coriander
1 pinch of salt
1 jet of Oil
How to make Shrimp Ceviche from Peru:
The first step we have to do to prepare this Peruvian shrimp ceviche is to peel the shrimp, remove the veins and cook them. We can buy them already cooked if you prefer.
Next, we peel and cut the small red onions into super thin slices and reserve them for later.
Then we do the same with the tomatoes, we cut them into very thin slices and reserve them.
Then we squeeze the juice of the 10 lemons and the orange and combine them, so the shrimp ceviche from Peru will have a pleasant acid flavour on the palate.
Then we remove the stems from the coriander and finely chop its leaves, and we reserve it as well.
Now we take all the ingredients of the shrimp ceviche that we have reserved, mix them and let them rest in the refrigerator for at least an hour so that they marinate well.
Once that time has passed, we take the Peru-style shrimp ceviche out of the refrigerator and serve it with chilli, patacones, or canguil.
